To make them visible you have to enable the Developer tab on the Ribbon. You can now use these controls in a document. The Text Box lets the form-filler type in their own answer. Double-click on this Text Box to control its options. The Combo Box lets you enter a list of choices that will appear in a drop-down list.
The form-filler can select only one choice. Pretty cool, right?

I found nothing, so I am thinking it's not possible. And yet I find that hard to believe I have lists with in excess of 10, entries. Some have a few thousand, some over 10K. What I was expecting is that when I set up those lists as validation lists for cell input, I would be able to just start typing and the list would move to any valid entries.
